Natural Seedless Raisin

 

General

This ingredient shall be of food grade and in all respects, including labeling, in compliance with the Federal Food, Drug and Cosmetic Act of 1938 as amended and all applicable regulations thereunder.

 

Definition

Stemmed, capstemmed, cleaned Natural California Seedless Raisins, Select size, to be of typical color and raisin flavor. No preservatives shall be present in this product. Furthermore, the packaging materials used shall not contain any additives or preservatives which can migrate into the product.

 

Chemical composition

Moisture - 18.5% Maximum (by DFA - Dried Fruit Association Meter)

 

Physical Characteristics

Defects - as defined in the US Standards for Grades of Processed Raisins

Pieces of stem - 0 loose (embedded stems may become loose during transportation)

Nubbins, capstems, embeds and loose embeds (not larger than capstem) - less than 5 g / 600 lbs

Sugared - 5% at time of pack

Discolored, damaged or moldy raisin - 4% in total (provided these limits do not exceed: damaged - 2%; moldy - 2%)

Grit, sand or silt - none of any consequence

Stones (including hardpan) - practically free from

Metal - practically free from (our level of detection s: ferrous - 0.8 mm; stainless steel - 1.2 mm)

Maturity - grade B or better

 

Microbiological

E.coli - absent in 1 g

Salmonella - absent in 25 g

Yeast and Mold - less than 5,000 c/g

Standard Plate count - less than 10,000 c/g

 

Packaging and Case Markings

Packed in blue polyethylene lined, taped corrugated containers holding 13.6 kg of product.

Shipping

Product shall be shipped via approved carriers, in inspected and approved containers

 

Storage

Keep in cool dry storage (12 C, 55% RH) to minimize sugar crystals forming in or on fruit. Protection against potential Insect infestation needs to be addressed during storage.

 

CRITICAL CHARACTERISTICS

 

1. Moisture: 15-17 % (DFA Method)

 

2. Oil: 0.25-0.75% by weight NT100

 

3. Particle Size: 800-1200 (Target 1000). No more than 60% by weight of raisins will pass through round perforation 22/64" in diameter, but not more than 10% by weight of all raisins may pass through round perforation 20/64" in diameter

Maturity: Over 70% by weight

 

4. General Defects

Stems: 1 per 30lb sample average

Capstems: 7 per 1lb sample average

Sugared: 5% by wgt max- Grade B

Damaged: 3% by wgt - Grade B

Moldy: 3% by wgt - Grade B

Substandard and Undeveloped: 1.5% by weight max

Grit, Sand and Silt: None shall be present

 

5. Shelf life: 12 months <75F and 65%RH

 

Zante Currants

 

General

This ingredient shall be of food grade and in all respects, including labeling, in compliance with the Federal Food, Drug and Cosmetic Act of 1938 as amended and all applicable regulations thereunder.

Definition

Stemmed, capstemmed, cleaned and oil coated Zante Currant raisins. They Shall be of Grade A or better for stems and capstems and Grade B or better for all other categories.

No preservatives shall be present in this ingredient. Furthermore, the packaging materials used shall not contain any additives or preservatives which can migrate into the ingredient.

Chemical composition

1. Moisture (By DFA-Dried Fruit Association Meter) - 15.0 to 20.0%

2. Pesticide Residues - To comply with FDA regulations.

3. Vegetable oil coating - Durkex 500 NG: 0.5 to 1.0% by weight.

Physical Characteristics

1. Defects - (As defined in the U.S. Standards for Grades of Processed Raisins):

Pieces of stem - Grade A or better

Capstems - Grade A or better

Substandards/Undeveloped - 5% by weight

Sugared - 10% by weight

Mold daaged raisins - 4% by weight

Maturity - Grade B or better

 

2. Processing: Apply Durkex 500 NG: 0.5 to 1.0% by weight.

 

3. Finished product: Zante currants shall be of typical color and have a characteristic dried currant flavor. The product shall be as free from all forms of foreign material as can be achieved through Good Manufacturing Practices.

 

Packaging

To be packed in polyethylene lined, glued corrugated containers, each holding 25 pounds of product.
