Product Description Sweetened dried cranberries are produced by infusing a sucrose syrup into sliced superior grade cranberries until a specific equilibrate Brix range is reached. The product is then dried to moisture specification AND lightly sprayed with oil. The process conforms to all provisions of the Food Drug and Cosmetic Act. This product is Kosher-approved: A current kosher certification letter-acceptable to the Orthodox Union - is required to be supplied to Mariaini Packing Co., Inc. upon initial approval and annually thereafter.

 

Critical Characteristics

 

1. Moisture: 13-18% (Karl Fisher Method)

2. Oil: .5% + .3%

3. Water Activity: 0.45-0.65 (Decagon Method)

4. Particle Size: 900/pound (+ 300)

5. General Defects:

Color: Characteristic rich berry red

Flavor: Typical tart, sweet cranberry flavor with no off color or odor

Foreign Material: Free of plant matter, foreign matter and insect contamination

Plant Material (Stems/Leaves): 2% Max/25lbs

Screening: 5% max retains on 5/8" mesh screen and 1% Max through US#4 screen

Appearance: Intact, individually sliced

6. Ingredients: Dried Cranberries (Cranberries Sugar, Sunflower oil)

7. Microbiological:

Yeast and Mold: < 100 cfu/g

Total Plate Count: < 200 cfu/g

8. Shelf Life: 12 months stored in a cool, (less than 75F) dry (less than 65RH)
